This past Sunday marked the 85th Annual Academy Awards show and I decided to throw a little shindig in it’s honor. I invited a handful of girlfriends and told them to wear their glammest party pj’s and bring oscar-themed appy’s we could enjoy while talking ish about fashion hits and misses on the red carpet (Really Anne, really?!).
After contemplating the idea of creating a popcorn bar or even movie reel pizza (don’t ask) I decided to make like Jessica Chastain’s dress and go with a more classic approach of veggies and dip. And by dip I mean the best guacamole you’ve ever had.
I know, it’s a bold statement. But this guac was guac at it’s finest. Chunky, slightly spiced with jalapeno and spiked with garlic, fresh lime, cilantro and sea salt- it had all the right flavor components going on. Plus the recipe was adapted from Brian Canlis of THE Canlis so Seattlelites you know it’s gonna be good.
Now before I divulge the recipe I have to confess I’m pretty much addicted to avocados. I eat them every day and find they have a way to enhance almost any recipe with their creamy texture and delish taste. Affectionately dubbed the alphabet fruit (because of all the vitamins it contains) one avocado provides your body with vitamins A, C, E, K and B6, along with an enormous amount of potassium and “healthy” fat (omega-3, the good kind that prevents against heart disease). They provide all 18 essential amino acids necessary for the body to form a complete protein (crucial for vegans) and help improve your absorption of nutrients when combined with other foods. Last but not least they help to reduce signs of aging, regulate blood sugar and improve eye health.
Basically, an avocado a day keeps the doctor away. And this guac will easily get you to your daily dose.
Academy Award Winning Guacamole
adapted from Brian Canlis of Canlis Restaurant
- 4 ripe avocados (the stems should slightly indent to the touch)
- 2 ripe tomatoes
- ½ yellow onion, finely chopped
- 2 cloves garlic, minced
- ½ small jalapeno, minced
- juice of ½ a lime
- 1 bunch of cilantro chopped without the stems
- 1 tablespoon sea salt
- fresh ground pepper to taste
- Mash your avocados with a fork.
- Toss in all other ingredients and continue to mix until well combined.
- Serve in bell peppers with the top cut off (thank you, Pinterest) alongside fresh veggies and corn chips.
- Learn how to gracefully accept compliments and try to share with others.
MLB decided to opt out of the party (which is the polite way to say he wasn’t actually invited) but I still let him sample the guac. He declared it Oscar-worthy.
