Easter is this Sunday, and it means many things to different people. For some, it’s all about chocolate and marshmallow peeps, for others it’s a time to dye eggs and take pictures with the Easter Bunny and for many it’s a very important and symbolic religious holiday.
For me, it’s a time to celebrate a religious ceremony of my own: #BRUNCH.
Now if you follow me on insta, you know this betch can seriously brunch. It’s definitely my favorite meal and one of the events I look most forward to on the weekends. GF Pancakes & waffles, huge honey & cinnamon hemp milk lattes, avocado toast, poached eggs, scrambles, farmers market hashes, acai bowls piled with fresh fruit, mimosas….I could go on forever baby (#homealone reference). It’s also a great way to connect with friends and family without spending a fortune (and hosting a brunch is usually much less expensive and complex than a dinner party).
I’m hosting Easter brunch this year at our new house (in my new DREAM kitchen, thanks MLF) and I’m keeping it simple by doing it potluck style. So, for those of you hosting or attending a similar event (or just for my fellow betches who live for brunch) this recipe roundup is for you!
BONUS- all of these recipes are fairly healthy plant-based whole foods recipes that will keep you feeling full and fabulous long after brunch.
These pancakes are EVERYTHING. They are so easy, gluten-free, dairy-free and SUPER delish. Totes MLF approved.
2. Avo-T0ast / Toast bar!
Okay so it’s a pretty simple recipe (bonus!) but avocado toast is #sohotrightnow. Plus how adorbs would it be to host a toast bar (I’m seriously going to do this soon). Just pick up some fresh baked bread (make sure to have some gluten-free options- Flying Apron makes some amazing bread if you’re a Seattle local) and get creative with the toppings- soft-boiled eggs/ truffle oil/ avocado, peanut butter/ banana/ honey, tomatoes/cucumber/hummus, jam/berries/yogurt…..the sky is the limit!
These waffles are super easy, filled with fiber and protein and one of MLF’s faves. You can make these ahead and then warm them in the oven before brunch. Make it a waffle bar with topping options like almond butter, maple syrup, fresh fruit and coconut shavings.
DISCLAIMER- I haven’t actually made this dish but it looks like a total crowd pleaser and a hearty, one pot option (less dishes to wash- hells yeah)!
Baked oatmeal is a fantastic potluck option. You can make this ahead, rewarm in the oven and top with coconut whipped cream. I plan on making a version of this on Easter but swapping the peaches for strawberries and rhubarb since they are yet to be in season.
Lattes- a necessary accompaniment to brunch. I like mine huge with frothy hemp milk, raw honey and anti-inflammatory spices like cinnamon and turmeric- AKA my glowing golden latte. If you REALLY want to pull out all the stops when hosting brunch, this is the way to go.
OMG- this looks amaze and a perfect potluck brunch situation. If you want to remain dairy free just omit the goat cheese.
For those of you who haven’t heard of Gluten-Free Goddess yet, she is a GENIUS when it comes to gluten-free baked goods. This recipe had me at “chocolate-chip banana bread.”
But seriously, what’s a brunch without cocktails? I love this twist on a mimosa by jazzing it up with prosseco, pom juice and pom seeds (plus pomegranate juice is LOADED with antioxidants).
These parfaits are TDF. I’ve made yogurt/granola for many a brunches and people always love it. Perfect for a variety of palates/dietary restrictions, you can make a parfait bar friendly for everyone by adding different types of yogurts (coconut milk, greek, cashewgurt), granolas (gf, paleo friendly, etc) and toppings like fresh fruit and honey.
