There’s never not a good time for tacos, but they tend to taste especially amazing when it’s sunny out.

And REALLY especially amazing when they’re filled with seasonal summer produce like sweet corn, zucchini and summer squash.

And they’re the MOST amazingest (just go with it) when they’re topped with a creamy, avocado cilantro crema (seriously this stuff is like crack).

And let’s not forget they’re also super nutrient dense, healthy, filling, vegan, gluten-free, GRAIN-FREE and easy to make. Obvi.

And if you STILL don’t believe me I’ll leave you with a direct quote from my meat-loving hubby “Damn these tacos are so gooooood.”

Grilled Summer Squash and Corn Tacos

Serves: 4

Ingredients

  • 2 ears of sweet corn, husked and kernels sliced off the cob
  • 1 small yellow squash, chopped
  • 1 small zucchini, chopped
  • ½ sweet walla walla onion, chopped
  • ½ jalapeno, chopped
  • 4 cloves garlic
  • 2-4 tbsp olive oil
  • 1 tsp sea salt
  • black pepper to taste
  • 8 Siete Almond Flour Tortillas or other GF corn tortillas
  • Daiya shredded cheddar cheese (vegan) or other cheese if you eat dairy
  • additional cilantro and lime

Avocado Cilantro Crema

  • 1 cup cilantro
  • 1 avocado, chopped
  • 3 tbsp olive oil
  • 1 tbsp water
  • 1 lime, juiced
  • 2 garlic cloves
  • ½ tsp sea salt
  • black pepper to taste

Preparation

  1. Pre-heat grill OR heat a large pan over medium high heat on the stove (I prefer grilling in the summer time). If using the pan coat it with olive oil and add the onion and cook for 5 minutes before adding the rest of the chopped vegetables, garlic and seasoning. If using a grill coat all veggies with olive oil, garlic and spices and spread out evenly on foil. Using either method cook thoroughly until veggies start to crisp and caramelize around the edges.
  2. While veggies are cooking combine all avocado cilantro crema ingredients into a food processor and pulse until well mixed and creamy.

  3. When veggies are close to being done toss in cheese (if using) to make sure it melts and then remove mixture from heat.
  4. Heat up tortillas (either for a minute on a pan or in the microwave) and spread generously with the avocado cilantro crema. Top with the veggie mix, fresh cilantro and lime.

I like to pair with a crisp vino verde but these babies would be good with just about anything.
