Bust out the BBQ’s because Memorial Weekend is back- and nothing says Memorial Weekend (and summer!) quite like grilling up some grub.
But this summer I’m challenging you to set aside the burgers and hot dogs and elevate your grill game with some nutrient-dense, veggie-centric dishes.
I know it sounds lame but if you’ve had grilled veggies than you know they’re next level. Think grilled corn topped with chipotle butter (grass-fed obvi), crisp romaine lightly charred and tossed with tangy caesar dressing and lemony olive oil, spiced smokey sweet potatoes with a crunchy outer layer……you feel me? Grilling is one of the tastiest way to get in your veggies AND one of the easiest.
There are also so many other options out there for non-meat eaters when they want something other than just veggies- and if you’re searching for something along those lines then you’ve come to the right place my friend.
Whether you’re looking to impress your guests (or yourself), satisfy your friends with dietary restrictions, cook healthier meals in general or just try something new you’ll find all of the above below. Burgers and dogs optional. Rose required.

These grilled sweet potatoes will please even the pickiest of eaters. Don’t forgo the sauce- the mexican-tahini is seriously on point.
Not only is tempeh more nutrient-dense than tofu and easier to digest, but it tastes even better and is amazing grilled. This is hands-down one of mine and MLH’s (meat-lovin’ husband’s) favorite dishes and will be on repeat all summer long.
Not to dishearten you- but the majority of store-bought veggie burgers are loaded with soy, oils, chemicals and light on the “veggies.” These burgers are actually chockfull of produce and protein-rich quinoa and taste great on a lettuce wrap or gluten-free bun.
I think the name really says it all here. I make this whenever I’m in need of a serious crowd-pleaser and I’ve never met a man (or woman) who didn’t like them.
It’s all about the tangy, slightly spicy chipotle honey lime dressing with this sweet potato salad. This one can be made ahead and refrigerated so it’s perfect for a potluck or summer picnic.
Grilled romaine is like so hot right now and if you haven’t yet it’s time you jump on the bandwagon. Drizzle with this vegan caesar dressing and get ready for endless compliments.
I know, again with the tempeh, but it’s for a very good reason. These “ribs” are not only nutrient dense and healthy as heck, but they’re stupid easy to make and only require six ingredients. #winning
