In honor of this glorious day, I bring to you a quick recipe roundup of some of my FAVE Mexican recipes. I could honestly eat these dishes every week which isn’t a bad thing considering how nutrient-packed and surprisingly healthy they are! So make them today, or make them all year long. There’s absolutely no reason why you shouldn’t. #ijustcantquityou

1. Sweet Potato & Black Bean Tacos-

Hands down my most popular recipe and equally loved by guys and gals. One of the MLB’s faves.

2. Chargrilled Chile Relleno with Quinoa, Corn & Black Bean Stuffing-

A vegan Chile Relleno pepper topped with vegan cheese and avocado

Quite possibly my new fave dish. I’ve been dreaming of it every night since I made it last week. Seriously satisfying and seriously tasty.

I consider myself a guacamole connoisseur so trust me when I say that this recipe defines what all guacamole should taste like. It’s got it all going on- a bit of spice from the jalapeno, tons of flavor from onion, sea salt, fresh garlic, cilantro and lime, and a whole lot of creamy avocado and chunky tomato (mandatory!).

4. Roasted Cauliflower & Chickpea Tacos with Whipped Jalapeno Yogurt Sauce-

These are not only delish, they’re super pretty as well. A fantastic recipe to whip up when you’re trying to impress!
