Five-Ingredient Zucchini Pesto Pasta w/ Fried Egg #SoFancy but #SoEasy
Okay, I hear you guys.
You’re busy, you’re traveling, you’re trying to enjoy the long days of summer, you’re too HOT to spend a ton of time in the kitchen and ain’t nobody got time to make a gourmet healthy meal (but you still want healthy delicious food)!
Well, your prayers have been answered because I’ve come up with a delicious, nutritious meal that seems super fancy but is only five ingredients and takes 10 minutes to make (you’re welcome).
This is how it’s done my friends:
- You take an organic zucchini (so in season right now).
- You stick the zucchini on a spiralizer (if you don’t have one get one here– this is essential to make pasta out of basically anything!)
- You crank the wheel and spiralize the sh*t out of that zucchini.
- You toss the zucchini with pesto (either store bought or homemade like my life-changing pesto sauce).
- Then you fry and #putanegg on it (don’t forget the salt n’ peppa)
Does it get any easier than that? I think not.
I mean, how fancy and delish does this look? The MLF (meat-lovin’ fianc) and I have been making it on the reg and using duck eggs which I’m obsessed with right now. If you want to add an extra step you can also toss in asparagus or sautee or grill the zoodles (zucchini noodles) which the MLF prefers (it gives it a more pasta-ish texture). I prefer it raw because you’re absorbing more nutrients from the zucchini that way (heat diminishes antioxidants) and it’s fresh to death.
If you’re not already convinced here’s a few other reasons why you need to make this dish now:
– Zucchinis are like #sohotrightnow (as in, in-season). They’re high in wrinkle and cholesterol-fighting antioxidants, low in calories, and high in fiber ( and an amazing low-carb substitute if you’re trying to avoid grains or pasta).
– It’s packed with protein. One duck egg adds 10 grams of protein and have different proteins in the whites than chicken eggs which some believe are easier to digest. If you have problems digesting chicken eggs (like I do) you may want to give duck eggs a try. Don’t forget the pesto which packs in additional protein with pine nuts.
– Add healthy fats and you’ve got a completely balanced, easy to digest meal. A duck egg adds tons of omega 3’s (which is an essential fatty acid we can’t make on our own and are considered a vital part of a balanced diet). Pine nuts from the pesto contain fatty acids that lead to the release of high amounts of cholecystokinin (CCK), an appetite-suppressing hormone. Plus because this meal only contains protein, vegetables and healthy fats it’s an easily digestible meal for your belly (meaning no bloating, gas, or energy being used to break down the food that it could be spent elsewhere).
