Paleo Pecan Pie Gooey Bars + CBD Salted Caramel

TBH I’ve always been team pumpkin pie, but I’ve gotta admit these paleo pecan gooey bars have recently swayed my opinion.

There are SO many reasons why I love this treat, including (but not limited to) the fact that they —

 

+ Are much easier to make than a pie (i.e. no crust)

+ Satisfy pretty much all of my holiday dessert cravings (i.e. a gooey, nutty, buttery, salty sweet mix between a caramelized pie and flaky cookie)

+ Are completely grain, dairy and refined-sugar-free (i.e. less likely to cause gut inflammation)

+ Sneak in stress-reducing + mood boosting nutrients (CBD, magnesium + gut-friendly fiber)

+ Are a MAJOR crowd-pleaser (one of my hubby’s absolute faves and he doesn’t mess around with his sweet tooth)

 

But before you skip to the recipe (and I don’t blame you if you don) let’s talk CBD for a hot minute.


WHAT YOU NEED TO KNOW ABOUT CBD (THE BASICS)

CBD is having a major moment in the health and wellness world, and for good reason.

It’s touted to assist with a super broad scope of wellness concerns ranging from reducing stress, anxiety, depression, pain and inflammation to boosting mood, sleep quality, skin appearance and gut health.

This is because CBD is rich in cannabinoids that interact with almost every system in our bodies, helping to balance and regulate our neurotransmitter function, inflammation, mitochondrial function and metabolism.

While I’m personally a big proponent of CBD (I use it daily as a part of my nightly relaxation/wind down routine) I am very adamant about doing your homework before purchasing/using any sort of CBD product.

This is because the industry is highly unregulated and there are plenty of companies making false claims to cash in on the trend.

AND just like with food, the marketing can be SUPER confusing. Thus it’s important to know and understand the quality of what you’re getting to ensure it actually works and is right for your specific needs (click here to learn everything you need to know about CBD before purchasing).

This is my tried and true favorite brand for many reasons (i.e. sustainably grown, full spectrum, CO2 extraction, made from the flowers/buds) but I encourage you to explore and see what works/resonates best with you.

AND if you’re not on board with the CBD, feel free to simply leave it out of the recipe. It will still taste amazing and be far less inflammatory than your auntie’s pecan pie, guaranteed.

Paleo Pecan Pie Gooey Bars + CBD Salted Caramel

This holiday-inspired grain/gluten/dairy-free dessert is easy to make, delicious & sneaks in stress-reducing + mood-boosting ingredients.

Ingredients

Shortbread Crust Layer: 

Pecan Layer: 

  • 2 cups chopped pecans
  • ⅔ cup coconut sugar
  • ½ cup coconut oil, melted
  • ¼ cup organic maple syrup 
  • 1 tsp vanilla extract

Preparation

  1. Preheat oven to 350 F and line an 8x8 square pan with parchment paper. 
  2. In a medium sized bowl, whisk together the crust ingredients, then press evenly into the bottom of the parchment lined pan. Bake for 15 minutes, or until slightly golden brown (it may puff up and this is FINE). 
  3. While baking, get started on your CBD Salted Caramel Glaze (if making). You definitely don't have to make this, but if you're looking to go all out extra (or just want a yummy glaze/dips for desserts) this is my go-to. Recipe can be found here
  4. Once the shortbread crust layer has finished baking, remove from oven (keeping oven ON) and set aside until completely cooled. 
  5. While cooling, add all pecan filling ingredients (except for the pecans and CBD) into a sauce pan and heat over medium until boiling, stirring consistently. 
  6. Once boiling, add in pecans and stir, removing from heat. 
  7. Add in your optional CBD Hemp Oil now. 
  8. Pour mixture evenly over cooled shortbread crust and bake in oven at 350 for 20 minutes, or until bubbling and golden brown. 
  9. Remove and let chill preferably two hours before cutting/serving. Will last in fridge for up to a week or freezer for 1-2 months.
